For a man's manhood, there is nothing more than standing in the restaurant and announcing that the ribs are not ready, while the wife's potatoes and beans give a final breath.
The problem is that it is much more difficult to control the temperature of most outdoor cookware compared to your kitchen oven (

But you don't need to buy a restaurant-level Cambro, you may have one in the garage: plastic beer cooler.
If you don't, it's time to buy one.
Buy a plastic beer cooler big enough for a big turkey or pack a cow bris.
Make sure it is well insulated, make sure it is tightly sealed and make sure it is easy to drain water as you may want to use it to pack things and make sure it is easy to clean.
Wheels are a good accessory.
Buy an aluminum pan suitable for the interior to make it easier to clean up and keep a roll of heavy aluminum foil and a two-piece clean old towel inside when not in use.
The idea is that for food that takes a few hours to cook, such as turkey, beef bris barbecue, shoulder nuggets, ham, ribs, one hour or more ahead of what you think is necessary
This gives you enough time to adapt to unstable environments, such as rain, which can dramatically reduce the temperature of the grill, or blow out the wind of the flame, or just an odd old wound that doesn't want to cook.
If everything goes well and your food is ready very early, you can put it in the indoor oven at low temperatures or in the faux Cambro.
Here's how to use it: If you think your turkey will take three hours, put it in about 4 hours before you plan to supply it.
Use a good meat thermometer and keep an eye on the temperature of the thickest part of the meat.
If it ends an hour or so before dinner time, it's fine.
Pour about 3 gallons of hot water into your faux Cambro and cover it.
Let it heat for about 30 minutes.
Pour out the water.
Put a towel at the bottom and place the disposable aluminum pan on top of the towel to prevent leakage.
Wrap the turkey with tin paper, leave the meat thermometer probe inside, put the meat in the pan, and put the second towel on it.
Close the lid, but allow the thermometer cable to hang under the lid if possible, and you are all ready.
I put three hours of meat in a homemade Cambro, far more than 145 degrees Fahrenheit.
If you don't have a good digital meat thermometer, buy one.

I use a maverick thermometer with cable so I can check the temperature on a regular basis.
Artificial Cambro not only can make sure your meat is ready after the side dish is finished, so make sure you don't have to sleep on the couch, this is a great way, you can take the excess turkey to your sister's house on Thanksgiving or during the race.
I also use it to roast turkey.
After storing or storing soft drinks, be sure to clean them thoroughly.
