Eric Akis: A feast of local cookbooks  -  gas cooktop with grill plate
If you need inspiration on what to cook and taste this summer, the four recently published books will fill you with a sense of taste --pleasing ideas.
Here are the short reviews and recipes for these books.
All books can be purchased or ordered from local bookstores and online retailers.

A group of food and beverage professionals in Vancouver Island are keen to develop a sustainable local food system.

It took the book three years to create.
It's not surprising when you collect content from busy chefs that work too much time.
If you like to buy, cook and eat local food, you will find that this effort is worth it.
The book is divided into chapters such as oceans, orchards, forests, fields and farms, enriching the wonderful recipes for how to prepare them.
They include drunken blueberries with honey Italian rolls, salmon smoked beef, Comox brie egg cakes with butter pumpkins, eggplant Pakistani dishes, and braised pork cheeks with potato balls.
Many of the talented people who contributed recipes to the book include Heidi Fink, Corey Perrin, Tara Black, and David Minnie.
The inspiring preface to the book, written by CBC Radio celebrity Don Genova, reminds us how lucky it is to live in a place where there is so much food, talented chefs showed us how to make them taste delicious.

The author Makini Howell is rich in color, of course-to-be-

Edited by Gary Hynes, the publisher of the publication, and contains beautiful photos of Rebecca Wellman.

The island winery in BC has attracted such positive attention because of its rich content, and has truly achieved three in one.

Finally, the chapter on visiting our wine region provides a itinerary and a map of how to enjoy a great life at local wineries, restaurants, farm markets and other culinary destinations.

Later in the summer, let the sweet salad in the early autumn shoulder season.
With the end of the summer, the delicious tart plums are at their best, and the rich, bitter radicchio has just begun to live independently.
Ricotta helps to combine their tastes, while jicama provides a nice crunch for the dish.
Make: 4 salad 1 tablespoon vegetable oil 1 cup basil soy whey cheese (recipe follows)
4 medium plums with sea salt and freshly ground pepper (About 3/4)
, Torn into a bite-like half and Pit 2 big lime 1 big head radicalization
1 small butter lettuce, torn into small pieces
8 ounces of jicama size pieces, peeled and cut into 1/4-
"Matchstick (about 1 cup)
4 serrano peppers, seeds and flakes, 2 tablespoons olive oil 2 tablespoons agave syrup 1/2 teaspoon sea salt 1/2 teaspoon freshly ground pepper for making salad, heat oil in a medium pot-high heat.
Add ricotta, cook for 5 to 10 minutes and stir occasionally until the bottom turns brown and gets a more dry texture. Set aside.
Preheat the stove or outdoor gas grill for five minutes at high temperatures.
Sprinkle the salt and pepper evenly over the cut edge of the plum, including the edge and the internal cavity.
If you use an outdoor grill, oil the grate so that the plum skin does not stick to it.
Bake the plum on each side for two to three minutes until a different grill mark is formed.
Take the plum out and put it on the plate.
Season the lime, pay attention to avoid the sour skin, then juice them and keep the juice for the seasoning. (
You need 4 teaspoons of zest and 1/4 cups of juice. )
Put the radicalized, lettuce, gikama, lemon zest and pepper in a large bowl and stir gently.
Set aside when you make up.
To make the seasoning, stir the oil, the preserved lime juice, agave syrup, salt and pepper in a medium bowl.
To serve, divide the salad into four plates.
Arrange two plums and a half on the salad of each plate.
Top the salad with a sauce, and top it with ricotta.

In a bowl of a mixer or food processor.
Mix in a short period of time until the mixture is smooth, about three to five minutes.
Add fresh basil and continue to mix until it is fully mixed, the mixture is creamy for about 15 to 20 seconds.
It will be kept in the fridge for 7 to 10 days.
This recipe comes from the sea salt recipe in the West Coast Kitchen, produced by Alison Malone etasoon, Hillary Malone and Lorna Malone.

For red cabbage and coriander, 1 teaspoon liquid honey 1 teaspoon 2 teaspoon ground cumin Juice 1 lime 1 Cup 4 cups vegetable oil Salt and pepper 2 cups chopped red cabbage 1 chopped coriander in a large bowl honey, cumin the juice of green juice and vegetable oil are mixed together.
Season with salt and pepper.
Add cabbage, onions and coriander.
Put slaw aside.
Avocado cream: 1 cup and 2 cups of sour cream. 1 tablespoon of lime juice per chopped coriander, mint and flat coriander
Leaf parsley 1 cup 3 cups olive oil 1 large avocado, de-core and peel salt and pepper in a deep bowl, pulse ingredients along with a soak mixer.

6 marinated white anchovies with raigano cheese (

Preheat the oven to 350 degrees F.
Put all the seasoning ingredients outside the oil removal into the bowl of the food processor.
