Mary in Chicago, Dear Mary, the word "best" is tricky.
I prefer to cook with charcoal or hard wood, whether it's taste or challenge, and I 've burned them to the hot coal stage.
The grill I long for is a large, shallow rectangular box with vents.
It is made of stainless steel and requires charcoal or wood blocks.
It has a steel frame that you can lift and a dome cover that is attached to the base with a hinge, so you can cook with a cover.
It cost the earth.
The version of the poor is the light box charcoal grill, which works fine, just like the kettle grill sitting outside my kitchen door right now.
Still, the gas grill is not better for convenience.
You go home from work and open it to cook.
Clean up is also easy.
If you don't mind cleaning up and have time to wait about 20 minutes for the coal to reach the right temperature, go and buy the charcoal model.
